Cooking in your Midea Slide-In Range - Oven will help you do just that! By roasting vegetables, in your Midea Oven, the preparation time will be reduced and all those delicious veggies will get more concentrated flavors and also provide a delicious and light sauce for your linguine. This recipe works perfectly when cooking for a large group of people or for one of those days when you don’t want to spend that much time cooking. All you have to do is place your veggies in a deep baking pan, roast them in your Midea Oven, cook linguine and combine everything together and now you have a delicious and colorful linguine dish to celebrate National Linguine Day!
Preparation time: 35 minutes
- 12oz linguine pasta
- 6oz asparagus, cut into 2-inch pieces
- 24oz cherry tomatoes
- 1 large zucchini, thick-cut
- 3 garlic cloves
- 3 cups arugula
- 1 tablespoon avocado oil
- 2 teaspoons lemon juice, more if desired
- Salt and pepper
In a pot, bring salted water to a boil and cook pasta al dente.
Place vegetables in a deep baking pan, brush them with 1 tablespoon of avocado oil, season with salt and pepper to taste.
Roast vegetables in your Midea Slide-In Range - Oven for 20 minutes at 425F, gently stirring halfway through. Remove the baking dish from the Midea oven and mash garlic and some of the tomatoes with a fork.
Add pasta, arugula, lemon juice and combine. Serve with lemon wedges and enjoy!
